Red beans and rice didn't miss me

MSN Money has an interesting article about switching to a diet of rice, corn and beans -- not just for health but also to save money.

I'm not sure I could convince my family to switch to a vegetarian diet. Or a pescetarian diet.

    I'll stick to my diet of low glycemic vegetables, carefully selected other vegetables, fish, poultry, limited meat and the occassional fruit. Beans and grains for the most part can go and whistle. Starch is not my friend, thank you, MSN Money, nor do I think it is the friend of anyone with corn allergies, hyperinsulinemia, hypoglycemia, diabetes, heart disease, IBS or difficulty processing carbohydrates properly, which I think about covers 90% of the American population.

    You have a complete protein when you combine beans and rice or beans and potatoes. Adding a salad or bread is really a good meal. Many southern people ate like this years.

    Yes, years ago, I was also told that a human being can survive on a diet of nothing but rice, beans, and corn.

    But, um, no way.

    I love beans and rice. I eat brown rice as well, which is more expensive than white rice but better for you. This is actually a very healthy and tasty meal, if you cook them right.

    Thanks for sharing that excellent article.

    There's nothing like a big bowl of brown rice, red kidney beans and salt and pepper.

    My big weakness is pasta. I love it, but it always put on the pounds like nothing else. I'm trying to switch from pasta to more rice dishes, but admit i don't often eat rice as it takes longer to cook.

    I eat a well-rounded diet with a pretty wide variety of fruits and veggies, and very little red meat. I get my protein from the occasional chicken, turkey, seafood, nuts and seeds. And beans.
